For the Salmon

  • 1 salmon filet, cut into cubes or chunks

  • 1 tbsp hot honey

  • 1 tbsp soy sauce or coconut aminos

  • 1 tsp olive oil

  • 1 tsp garlic, minced

  • Squeeze of lime (optional)

  • Salt + black pepper

For the Bowl

  • ½–1 cup cooked rice

  • 1 sweet potato, diced

  • 1 bunch broccolini

  • Green onion, sliced

  • Fresh cilantro

  • Olive oil

  • Salt + pepper

Instructions

1. Marinate the Salmon

In a bowl, mix hot honey, soy sauce or coconut aminos, garlic, lime juice, salt, and pepper. Toss salmon in the marinade and let sit for about 20 minutes.

2. Roast the Sweet Potato

Preheat oven to 425°F. Toss diced sweet potato with olive oil, salt, and pepper. Roast for 25–30 minutes, flipping halfway through, until golden and tender.

3. Air Fry the Salmon

Place marinated salmon in the air fryer at 400°F for 8–10 minutes, or until caramelized on the edges and fully cooked.

4. Cook the Broccolini

Heat a drizzle of olive oil in a pan over medium heat. Sauté broccolini for 5–7 minutes until tender-crisp. Add minced garlic and a pinch of salt if desired.

5. Build Your Bowl

Layer rice, roasted sweet potato, broccolini, and hot honey salmon in a bowl. Top with green onion and fresh cilantro.
