10–12 oz organic grass-fed top sirloin steak
4 stalks green onion, sliced
2 garlic cloves, minced
4 cups beef bone broth
2 cups portobello mushrooms, sliced
2 tsp extra virgin olive oil
2 cups water
1 tbsp fish sauce
1 tbsp tamari or low-sodium soy sauce
12 oz gluten-free ramen noodles
1 cup fresh cilantro
Fresh grated ginger, to taste
Salt, garlic powder, and onion powder, to taste
Optional: chili powder or chili oil for spice
Optional toppings: soft boiled egg, extra green onion, sesame seeds, or chili crisp

Instructions
1. Sauté the Aromatics
Heat olive oil in a large pot or saucepan over medium-high heat. Add garlic and green onion and sauté until fragrant.
2. Cook the Mushrooms
Add sliced mushrooms and cook until softened and lightly browned.
3. Build the Broth
Pour in bone broth and water. Add fish sauce, tamari or soy sauce, ginger, and seasonings. Bring to a boil, then reduce heat and let simmer for a few minutes to develop flavor.
4. Cook the Steak
While the broth simmers, season steak with salt, pepper, garlic powder, and onion powder. Sear in a skillet or cast iron pan until cooked to your preferred doneness. Let rest before slicing.
5. Cook the Noodles
Add ramen noodles to the broth and cook for 3–4 minutes, or until softened.
6. Assemble the Bowls
Divide noodles and broth into bowls. Top with sliced steak, cilantro, and any additional toppings you’d like.
